        In California, the Department of Public Health’s Food and Drug Branch mandates that all retail food establishments must have a certified food protection manager (CFPM) on staff. Managers or persons in charge must pass an accredited exam every five years to earn and maintain their CFPM credentials.
The CFPM does not need to be present during the establishment’s operating hours. However, a certified food manager may only serve as the designated CFPM for one establishment at a time.

          Yes, the California Department of Public Health requires that every foodservice establishment be supervised by a certified food protection manager. The CFPM does not need to be on-site during all hours of operation, but no one certified person can serve as the CFPM for multiple food facilities simultaneously.
