Does Illinois require food protection manager certification?
Yes, the Illinois Department of Public Health (IDPH) requires every foodservice establishment to be under the supervision of a certified food protection manager, sometimes referred to as a certified food service sanitation manager. Anyone preparing or packaging food as a product within a cottage food operation must also earn their certified food protection manager credentials.
