The Massachusetts Department of Public Health (MDPH) requires every foodservice establishment to employ at least one certified food protection manager (CFPM) and a person in charge (PIC) must be on-site during all hours of operation. The CFPM is responsible for overseeing food safety protocols during storage, preparation, and service. Every five years, CFPMs must renew their credentials through an approved certification provider.

Who needs a food protection manager certification in the state of Massachusetts?
Although The Massachusetts FPP holds establishments to the standards of the 2013 FDA Food Code, the legislature amended those requirements to state that PICs must earn their CFPM credentials. This requirement means that most managers must earn a certification every five years.
What happens if I cannot pass a certification exam?
If a person in charge attends a training course and fails to pass the certification exam after two attempts, the establishment’s permit holder may request a variance for that individual.
The permit holder must submit the following to the FPP:
(a) Signed documentation from the instructor that the person in charge participated in a food safety training program; and (b) The facility being in full compliance with 105 CMR 590.000.
